Trap of the Day: Cool Treats

While we may not be experiencing it in Portland quite yet (it was 58 and raining here yesterday), much of the rest of the country is preparing for summer weather, summer vacations, and lots of time enjoying the sunshine outdoors. Being a weak Pacific Northwest gal, I feel the need to be near a body of water if it is over 82 degrees. And that’s without humidity. Unfortunately, I can’t always be relaxing by a pool or lake every time the temperatures rise, so I have to make do with other ways of cooling off. These include refreshing glasses of lemonade or iced tea, and my favorite summer treat – Popsicles!

I do have to note that Popsicles aren’t just for summer consumption. Compared to most other desserts (think brownies, ice cream, pie, cake), Popsicles are a pretty healthy way to answer that craving for sweets. I always have a few pineapple or coconut Popsicles in my freezer just in case.  Anyway, back to lemonade, iced tea, and Popsicles. Using my editor capabilities, I decided to roll all of those warm-weather specialties into the Cool Treats Trap, which highlights all kinds of delicious ways to cool off.

I like the sound of the roasted strawberry and coconut milkpopsicles myself, but you can also try some mint lemonade (recipe courtesy of the lovely Eva Longoria), rose petal lemonade, or bubbly mint-lime iced tea. If chocolate is more your style, we suggest you try some homemade Nutella and banana Fudgesicles. Yum!

We say bring on the heat if it means that we can try all of these treats without feeling too guilty. With that in mind, cheers to summer!
